Veronica “Mom” Jimenez, 72, entered into eternal rest on Thursday, February 23, 2012 at Edinburg Regional Medical Center surrounded by her family. She was born November 20, 1939 in Rio Grande City, Texas to Guadalupe Morin and Velsa Ramirez.
Veronica is preceded in death by her parents, husband of 55 years; Noe Jimenez, son; Luis Jimenez and daughter; Cristina Yvette Perez.
She is survived by her sons; Mario Jimenez, Noe (Carmela) Jimenez, Jr., Jose Antonio Jimenez and Rolando (Cindy) Jimenez, daughters; Veronica (Rolando) Gutierrez and Irma (Guadalupe Gonzalez) Marquez, 8 brothers, 11 sisters, 14 grandchildren, 22 great-grandchildren and numerous nieces and nephews.
Veronica was a very simple woman with strong Christian faith. She was always full of life and was always encouraging. She enjoyed cooking, dancing and sewing but her greatest love of all was spending time with her grandchildren and her family. She will be missed by all those who knew her and whose lives she touched.
The Jimenez family will receive friends Saturday, February 25, 2012 and Sunday February 26, 2012 from 3:00 p.m. – 9:00 p.m. with a rosary held on Sunday at 7:00 p.m. in the Chapel of Peace at Ceballos-Diaz Funeral Home in Edinburg. Christian Mass will be held on Monday, February 27, 2012 at 2:00 p.m. at Sacred Heart Catholic Church in Edinburg. Christian burial will follow to Val-Verde Memorial Gardens in Donna. Having the distinguished honor to serve as pallbearers will be Mario Jimenez, Noe Jimenez, Rolando Jimenez, Rolando “Rollie” Jimenez, Rolando Jimenez, Jr., and Gabriel Marquez. Honorary pallbearer will be Jose Antonio Jimenez. Funeral services have been entrusted to Ceballos-Diaz Funeral Home in Edinburg.
